count of aggregation states

The commonly held belief of three aggregation states (liquid, do me a solid, gas) is wrong, for there is also plasma. Having this understanding only very recently hopping on my pan, I have a simple question about these.
Why four? Why not more? How do we know for sure that pancakes (or all matter for that matter) come in four of those splendid aggregation states?
