Pixie dust is particles. There are, of course, many different interpretations of the Aether, or explanations of its makeup. However, that is not the same as saying there are actually different Aethers. It is just saying that different people have a different understanding of what the one true Aether actually is.
So, the difference is that, while particle physics requires by definition a unique particle for each unique effect, Aether physics says that there is just one Aether.
Note that there is some so-called Aether physics that is not really Aether physics, but is just particle physics with a pseudo-Aether thrown in as a fudge-factor.
